Lucky Pot at Mia’s last night was awesome! It was so nice to spend time together with great friends in her beautiful new home.

I loved the Mexican Crema Liz used on the corn on the cob, and the meat in Meredith’s fajitas was seasoned to perfection! The guacamole made by Mia was gobbled up very quickly – yum! I made salsa with some wonderful tomatoes (so nice to be getting into season!!) – here’s the recipe :) I wish I had taken a picture!

Elissa’s Lucky Pot Salsa

5 medium tomatoes
Juice of 1 lime
1 bunch cilantro
1 Anaheim pepper
2 Serrano peppers
1 yellow onion
Sea salt to taste

Start by roasting the peppers on a grill or stove top, until they are blackened (should be very soft on the inside) remove seeds and skin, chop finely.

Chop the cilantro and onion finely and the tomatoes roughly. Mix all the ingredients and enjoy!
